A farm wedding venue that blends landscaping, carpentry & cuisine.In 1987 Steve Colletti, Executive Chef and Master Craftsman, met Diane, his future Bride-To-Be. Together they established two successful restaurants and a catering company. In fact, they regularly catered parties for over 5,000 guests! Following 9/11 they decided it was time to leave New Jersey and head to the Adirondacks. They fell in love with 150 acres in Olmstedville, NY where they established the It's About Thyme Farm, a working farm selling plants, vegetables, glass art and more. All the while they continued their careers in hospitality. It was during this time that Steve did his first construction project for Rachael Ray. As he was doing various projects for her, he fell in love with the post & beam and barn architecture. It is this inspiration that brings you to the Once Upon a Time Barn.
